Vegan Mediterranean Chickpea and Fig Salad

Last day of summer! it started out dreary and cold, making the cats hover underneath the covers still napping covered with blankets and down sheets, but now the sun it out and it looks and feels like summer again. Tomorrow, the semester starts, the students are flying into town, a new school year ahead. Salad today was fantastic --- a Mediterranean chickpea salad with diced red bell pepper, sliced zucchini from the garden, parsley, balsamic vinaigrette and a fresh fig. Hearty, crunchy, tangy, fresh and sweet! Note for food photographers: looks better before the balsamic vinaigrette is mixed in :-)
